Last year, on the day Spring Semester started I blogged about all the cooking I did the day before. In fact, I took a photo of my kitchen...it looked like this.
That would have been, essentially, one year ago today.
I certainly didn't produce that kind of volume today, but there was some definite experimentation in the kitchen today - and hopefully a week of food prepped so as the crazy that this spring term start is proving to be takes over - I won't have to think too hard about what I'm eating.
The first thing I tried today was "Cheeseburger Cups". Late last week, Michelle over at Decor and the Dog featured this recipe. I did think to pick up a pound of ground beef at the grocery since my freezer tends to feature more chicken and seafood than beef. However, I didn't pick up ketchup and it's not one of the things I keep on hand. So, I did the most natural substitution I could think of - a little honey brown sugar barbecue sauce. The recipe yielded 11 yummy delicious muffin tins of beefy goodness. If you'd rolled the biscuit dough a little thinner than I did at first you'd easily get 12 out of this. I think next time I might brown a little onion in with the beef - but otherwise - scrumptious!! While the homemade biscuits were a little bit of extra work, the deliciousness was so worth it.
Then, tonight for dinner, I decided to do something else off my Pinterest Recipe Board - coconut shrimp. Let me just say - SO EASY and SO DELICIOUS! I truly adore coconut shrimp in a restaurant, but I'd never tried making them before. I will DEFINITELY be making them again. The Cheeseburger Cups may have to wait because I might just make coconut shrimp again tomorrow night.

My notes on the recipe...I sprinkled the shrimp liberally on both sides with Old Bay seasoning (and skipped the salt and pepper). I also used frozen tail off shrimp. I just thawed the shrimp under running water and then proceeded with the rest of the recipe. I didn't have anything to use as a dipping sauce - so I will definitely have to try again so I can try one of the hundreds of dipping sauce recipes I came across tonight.
In between fielding about 100 emails today I also worked on an art project. It's intense! I have already killed two fine tip sharpies on this project...and I'm not done yet.
