Chocolate Mug Cake
I was craving chocolate this evening so I decided to try the recipe my aunt gave me while I was visiting her in Florida. It's a chocolate cake made in a mug in the microwave. In just about ten minutes (would have been less if I wasn't stopping to take photos) I had a yummy chocolate cake. Here's how:
You will need:
4 T flour
4 T sugar
2 T cocoa powder
1 egg
3 T milk
3 T oil
vanilla extract (about a quarter teaspoon)
Optionally, you can add 3 T chocolate chips. Unfortunately, I was out of chocolate chips. However, I couldn't let the recipe go without a bit of enhancement so I added the zest of about 1/2 of one medium orange as well as a dash of cinnamon. I'd also suggest adding about a 1/4 teaspoon of salt to the recipe no matter what enhancement you may or may not make to the recipe.
You can mix this right in your mug if you want, but I used a small glass measuring cup. I also sprayed the inside of my mug with just a bit of cooking spray which made clean up easy as...cake.
Mixing it all together is quick and easy.
Mix together the 4 T flour:
4 T sugar:
and the 2 T cocoa:

This is also when I'd add a dash of salt. It will enhance the chocolate flavor.
Add the egg and mix well.
Pour in the milk and oil and mix well.
If you're using any sort of enhancements (3 T of chocolate chips, zest of an orange with a dash of cinnamon, some nuts, etc all jump to mind as possibles. Trying it with a bit of chili powder and smoked paprika might also be interesting as well - I love chocolate with a bit of a "hot" kick) add those now as well as the vanilla and mix well. Do you use the cap of your vanilla to measure it? I find that even when I have plenty of measuring utensils out - I still use the lid for vanilla.
Cook for three minutes on high (cooking times in a microwave will vary - this is the time for a 1000 watt microwave).
The cake will rise up above the top of the cup while it is cooking. Mine stayed neatly within the cup on this first attempt. I have no idea if there is ever a situation that might cause it to fall over or make a mess but don't be alarmed when it towers up out of the cup.
I let the cake stand in the microwave for a couple of minutes. When it came out of the microwave, I topped it with a bit of powdered sugar. Sprinkles, mini chips, or other toppings might also be quite tasty.
The recipe says it will serve 2 and it could - although I had no problem eating the entire thing on my own. The mug will be hot so be careful and use a potholder or mitt while handling.
Fluffy wanted some while she was helping, but I had to tell her that chocolate wasn't good for cats.
