Not just another pretty face...
Dippy is an adorable little guy. He has been awfully clingy of late and tonight was no different. While I was making Rice Krispie treats he was hanging out with me.
I made Rice Krispie treats tonight for our staff meeting tomorrow. I used to hate making Rice Krispie treats because it took so long to melt the marshmallows over low heat so they didn't burn (have I ever mentioned I'm not patient). However, I've been making Rice Krispie treats via microwave only for a couple of years now. They are really quick. I've had several people say they've never heard of making them in the microwave so I thought I'd share how I do it.
If you want to make them, you'll need
6 cups of Rice Krispies Cereal
1 bag of marshmallows
4 T of butter or margarine (I used butter)
If you want to top with chocolate and peanut butter like I did you'll also need
About 1 cup of chocolate chips
1/4 - 3/4 c of peanut butter
I use crunchy peanut butter and I never measure the peanut butter and chocolate chips, so I'm not exactly sure how much of either you need but these measurements are going to be really close.
You'll also need two large, microwave safe bowls and a 9 x 13 dish. At least one of the bowls needs to be able to hold the entire bag of marshmallows and all the Rice Krispies so be sure not to use a bowl that is too small. (I tend to use a Pampered Chef large and small glass measuring cup as my two bowls and they work perfectly.) Use part of 1 T of butter to butter the bottom of the 9 x 13 dish. Reserve the rest of that 1 T to butter your hands for spreading the mixture into the pan.
Place the remaining 3T of the butter in the large bowl and then add the bag of marshmallows. Place in microwave and cook on high about 1 - 2 minutes. Watch them closely. Marshmallows expand in the microwave so you might need to stop the cooking once or twice and let the marshmallows lower back down so they don't get all over your microwave.
Once fully softened remove the marshmallows and stir to mix the butter through the marshmallows. Begin adding the six cups of Rice Krispies, mixing gently so you don't crush the cereal. Once fully mixed, place into your buttered dish and press down with buttered hands to smooth out the mixture.
Now place the peanut butter and chocolate chips in the smaller glass dish and place in the microwave. Melt on high for approximately 1 - 2 minutes in 20 second increments. After each segment, stir thoroughly. Only cook until the stirred mixture is smooth and creamy.
Spread over the top of the Rice Krispies. Cover and let set up just a bit before cutting and serving.
